Peach Salsa Recipe from Leduc Farmers Market

The best part of summer is when peaches are in season! Many of our customers at Leduc Farmers Market tell us they come back every week to load up on the sweet peaches from our vendors. Besides eating those juicy peaches as-is, there are so many other interesting things you can make with them including peach salsa! Here is a wonderful and easy peach salsa recipe that is the perfect addition to any summer meal. 

Ingredients:

1 lb fresh tomatoes, diced
1 bell pepper, finally diced
2 jalapeno peppers, finely diced
1 medium onion, finely diced
1/4 cup of chives, chopped
1 1/2 lbs peaches, diced
1/2 bunch cilantro, chopped
2 Tbsp lime juice
1 1/2 tsp salt, or to taste
1/4 tsp freshly ground black pepper or to taste

1. Chop tomatoes and put them in a large bowl.
2. Finely chop bell pepper and jalapeños. Make sure seeds are removed. Finely chop your onion. Add all to bowl.
3. Dice the peaches and add to bowl. No need to remove the skin. 
4. Finely chop your cilantro and chives. Add to bowl.  Measure in your lime juice and add in your salt and pepper. Fold everything together until well mixed. Add more salt and pepper to taste. Enjoy with chips or crackers.
